Food bank donations needed as demand rises

Tortilla Soup is rich and warm like a soft sweater on a cool winters day, a burst of slow, simmering warmth from a potbellied stove or the sharp sweet smokey scent of a mesquite fire.. Tortilla Soup, it is comfort.

Every Tortilla Soup recipe is a bit different and since Ive been making it for about 12 years its just a given that when Fall rolls around on our calendar, my tastebuds start tingling for the rich tomatoes, savory garlic and onions and the unique tang of cilantro and peppers that are only found in Tortilla Soup.

I warn you now.. this is not a side dish soup. Give Tortilla Soup its proper due. This is a meal.. to be eaten topped with lime juice, tortilla chips, cheese, sour cream and avocado slices. It is a soup that deserves a moment of appreciating silence.

Be still and take a deep breath, savor the smells and anticipate the impending tonguegasm.

Your ingredients:

  • shredded cheddar
  • Sour cream

Boil a large pot of water and add two whole chickens, 1 Tbsp Chili Powder, 1 Tbsp Cumin, 1 Tbsp Garlic Powder, 6 Bay Leaves

Boil the chickens for about 10 minutes, turn off heat, cover and set aside.

While the chicken is cooking, chop all other ingredients.

In a large stock pot, over medium-high heat drizzle some olive oil, add in chopped garlic, onion and poblano pepper cook, stirring occasionally, about 6 to 10 minutes or until fragrant and just translucent.

Add in chopped tomatoes, cook, stirring occasionally about 5 minutes.

Hooks Donate To Food Bank Of Corpus Christi

CORPUS CHRISTI, Texas – The Corpus Christi Hooks, in association with Rudy’s Country Store and Bar-B-Q, are making a cash donation to the Food Bank of Corpus Christi through KIII-TV’s “Share Your Christmas” program. That announcement was made today by Hooks president Ken Schrom.

Schrom and Natalie Rathburn, general manager of Rudy’s store on Airline, will present a check for the Food Bank during a live remote telecast on KIII-TV3 from the H-E-B Plus on Saratoga between 3:30 and 4:00 this afternoon. Channel 3 sportscasters Dan McReynolds and Chris Thomasson host the station’s coverage.

“On behalf of Rudy’s and our loyal fans, we’d like to make this donation to the Food Bank in the spirit of giving this holiday season,” said Schrom. “Giving back to the community is a big part of what we do, and we’d like to encourage those who are fortunate throughout the area to do the same and give whatever you can to this worthy effort.”

During the baseball season, Hooks fans line up along the Whataburger Field concourse for a chance to spin the Prize Wheel, sponsored by Rudy’s. Fans pay $1 to spin the wheel and win prizes like tickets to Hooks games, Rudy’s gift cards, breakfast taquitos at Whataburger and a variety of promotional items and Hooks merchandise. A portion of the proceeds from these Prize Wheel sales comprises today’s gift to the Food Bank.

The Corpus Christi Food Pantry helps prevent hunger.Our goal is to serve our clients while preserving their dignity. We are unique in that each client chooses their supplies from a list of whats available and then these items are bagged for them to take home immediately.

The Food Bank of Corpus Christi is an independent, nonprofit 501 organization that solicits and distributes food that might otherwise go to waste or be discarded by manufacturers, wholesalers or retailers. Since 1982, the Food Bank has been fighting hunger in the Coastal Bend by providing food and personal care products to various charity and service agencies in an 11-county area including Aransas, Bee, Brooks, Duval, Jim Wells, Kenedy, Kleberg, Live Oak, McMullen, Nueces and San Patricio counties.

As one of only two food banks in the state certified by H-E-B to receive perishable goods, the Food Bank is able to store and distribute perishable items such as meat, produce and dairy products. USDA products are also dispensed to agencies that qualify to receive government commodities. Our 20,000-square-foot warehouse is equipped to safely handle all types of food products and includes a 43,758-cubic-foot refrigerator/freezer.

The Treasurer would be a member of our Board of Directors, would prepare the annual fiscal budget, file all tax returns, etc.

The Bookkeeper would be responsible for the general bookkeeping and day to day clerical updates.

Food Bank Receives Big Food Donation From Cc State Supported Living Center


CORPUS CHRISTI, Texas The Coastal Bend Food Bank received a large food donation Tuesday.

It was made by the Corpus Christi State Supported Living Center which recently held a food drive. More than 700 employees participated in the event to help the food bank’s efforts to feed those dealing with food insecurities.

The Center’s Community Relations Director, Lori Garcia said,”We’re very fortunate to be essential workers during this pandemic so some of our families out in the community are struggling to put meals on the table. So what thought of of doing is a food drive to help the community.”

Barrels and boxes full of nonperishable food items were dropped off at the food bank. Employees even collected shampoos, body washes and other hygiene products as well.

“This goes to show what kind of residents and staff we have there at the State Support Living Center. They’re caring..not only they’re caring for the residents but they’re also caring about the community as well.”
