The Infamous Ohio Chicken Sandwich
This total comfort food is so basic. With only a few ingredients and easy slow cooker prep, I can see why it has become a regional favorite. One article I read said it was often served in prison and should stay there. LOL! Another mentioned its church potluck history easy to serve a crowd. I have loved hearing where you all have found this hot chicken sandwich recipe over the years from the concession stand to being on the menu as the Dairy Queen shredded chicken sandwich Overall, like Chipped Beef on Toast, this meal is all about memories, nostalgia and regional tradition.
Below you will see my version of this Buckeye State classic recipe . The classic recipe calls for saltine crackers, but my sister has always used breadcrumbs. I decided to do a mix of breadcrumbs and a stockpile pantry staple croutons. I think the croutons give it a nice texture and added flavor.
And in the numerous comments on this post you will see the variations on this recipe. I think potato chips are my next try as filler. Lots of you mentioned using canned chicken for the base but I dont think hubs will let me try that variation.
UPDATE: I used to shred my chicken by hand but I tried that Shredded Chicken Hack, and it worked!

Over the next five years, the Foodbank will increase the free food distribution to partners, enabling the optimization of their resources.

Akron Canton Foodbank Seeking Food Donations After Giving Drops Nearly 20%
AKRON, Ohio Every third Friday of the month, Open M in Akron hosts the Mountain of Food distribution which helps out more than 200 families.
Stephen Tenney, a Marine Corps veteran, waits in the drive-thru line and is grateful to bring home meals for himself and his wife.
“It’s a blessing to have people out here to help,” Tenney said. “To me, it lets me know I have a little bit of extra food in the house and I don’t have to worry about going hungry.”
However, supplying food to pantries like Open M has become more challenging for the Akron Canton Regional Foodbank because donations from stores, wholesalers, and manufacturers are down 19% compared to this time last year.
The reasons mirror what consumers are seeing in stores, according to Jenn Dyer, the director of operations for ACRFB.
“We go into the grocery store. We see empty cooler cases. We see empty shelves. We see less commodities to purchase ourselves. Supply chain is a thing. Inflation is a thing,” Dyer said.
The 4,000-square-foot cooler inside the facility is typically full of food, but since the food inventory turnover is too high due to increased demand, the area usually strained for space has a lot of empty shelves.
The Foodbank did receive a recent boost when Superior Dairy donated 123,000 pounds of cottage cheese. Dyer stressed the donation is a big deal because of the needs that were mentioned by 30 food programs during listening sessions early this year.

The Major Giving Officer oversees all aspects of direct donations for major giving program or major giving potential, including prospect research, relationship building, proposal development, stewardship, and organizational reporting. This position will manage a portfolio of 125-150 individual donors, with an emphasis on donors in the southern region of our service territory, that demonstrate the potential of a major gift, defined as $2,500. The emphasis of the Major Giving Officer is to maximize the donations from individual donors to support essential mission related activities, event sponsorship opportunities, and programs in alignment with strategic goal achievement.
The Major Gifts Officer will work out of both our Akron and Canton Facility.
Job Responsibilities:
1. Strategically lead initiatives to identify, engage, cultivate, solicit, and steward individual major donors and major donor prospects.
3. Develop ongoing relationships with major donors through a portfolio of 125-150 donors.
4. In collaboration with the Director of Corporate Relations, manage relationships and solicitations of individual major donors through the major donor partner program.
Volunteer With Your Foodbank In Canton
The Stark County Campus now offers volunteer opportunities. Morning and afternoon shifts will be available each week in the AEP Foundation Volunteer Center for volunteers to sort, inspect or pack donated food based on the needs of the day. Volunteers may also support administrative tasks or assist in the Werner Family Marketplace by distributing fresh produce to hunger-relief partners.
New volunteer positions will be available in the Keith D. Monda Family Food Pantry & Resource Center beginning August 3, 2021. Tech-savvy volunteers are requested to help community members place food orders at an online kiosk, while detail-oriented volunteers are needed to pack food orders and stock the pantry.

Aultman Health Foundation Resource Room Now Open
We are excited to partner with local organizations that will offer onsite support services to the community. Community members are invited to connect with partners in the Aultman Health Foundation Resource Room and utilize their free services from 9am-3pm on Tuesdays and Wednesdays.
Aultmans Working on Wellness team, staffed by registered nurses, will provide health screenings and educations at no cost. Health information is available on a variety of medical topics and can be customized to fit an individuals needs.

Goodwill will assist individuals in navigating and connecting to community resources, provide financial education on topics related to personal finances, help individuals overcome barriers, and develop the skills necessary to obtain, maintain, and/or upskill to achieve personal career goals.

Akron Canton Foodbank Truck Helps Distribute Food To Neighborhoods In Need
CANTON, Ohio The Akron Canton Regional Foodbank is hitting the road to help families in need.
The agency purchased a new truck in late 2020 and converted it into a pop-up pantry.
After much research, the foodbank determined Portage and Stark Counties were ideal locations based on an increase in need.
The refrigerated mobile pantry visits the J Babe Stearn Center in Canton on the first Wednesday of the month and Kent State University on the third Wednesday of the month.
Both the community center and KSU provide volunteers to manage the food distribution.
Foodbank employees and volunteers handed boxes of shelf staple foods and frozen meat to nearly 70 families at the Canton location Wednesday afternoon.
61-year-old Mike Cupples was the first in line at the drive-thru distribution.
Cupples, who has three other family members in his home, has been on disability since he was hurt on the job in 2006. He believes the pop-up pantry is much needed.
“I think this is awesome because a lot of people can’t afford, or be able to get to the store period,” Cupples said.
56-year-old Van Foley, who works seasonally and is currently laid off, was also grateful for the food and realizes many others are struggling amid the pandemic.
“This is a pretty devastating time for people,” Foley said.
“The idea that we can meet community members where they are in their own community, it means a lot,” said Raven Gayheart, a spokesperson for Akron Canton Regional Foodbank.

Akron Canton Foodbank And Clients Feel Inflation Pressure
AKRON, Ohio When the Stark County campus of the Akron Canton Regional Foodbank opened last August, organizers of the on-site pantry expected to serve 100 families per week.
But with inflation impacting so many residents, about 400 families per week are now visiting. On Tuesday alone, 240 families showed up for help the largest number for one day since the pantry began serving the community.
Katie Carver Reed, the director of network partners and programs, said ACRFB has experienced an 11% increase in pantry visits compared to this time last year. About 19% of visitors are coming for food assistance for the first time.
The numbers had already grown amid the pandemic. Inflation has only exacerbated the overall need.
“They’re making difficult choices between putting gas in their car so they can go to work or putting food on the table,” Carver Reed said. “When your resources are stretched thin, the cost of goods is rising and the amount that you make isn’t rising at that rate, that makes it hard. Families are turning to us more as a result of those increased costs across their household.”
The food bank, which serves eight counties, is also feeling the pressure from both inflation and supply chain issues.
“We have about 20% down in food sourced overall this year and so when we’re seeing less food available to bring in, it is harder to fill the shelves.”
On top of that, the staggering cost of gas is adding to the struggle.
